Tagliatelle chorizo & burrata
The perfect combination of the creaminess of burrata with the spiciness of chorizo!

Ingredients
- 200g of dried tagliatelle
- 60g of chorizo (whole)
- 1 burrata
- 200g of tomato sauce
- 1/2 red onion
- Olive oil, salt, pepper
- A few basil leaves (optional)
Steps
- Peel then finely chop the onions.
- Remove the skin from the chorizo then cut it into small cubes.
- In a pot of salted boiling water, cook the pasta according to the package instructions. At the end of cooking, set aside a small ladle of cooking water, then drain the pasta.
- Meanwhile, heat a drizzle of olive oil in a pan, over medium heat. Add the onions and the chorizo cubes. Fry them for 3 minutes, stirring.
- Add the tomato sauce. Season with salt and pepper. Mix and continue cooking for 2 minutes, over low heat.
- Add the reserved cooking water and the tagliatelle. Mix well.
- Serve the tomato and chorizo tagliatelle on a plate. Add the burrata on top. Re-season to taste and add a few basil leaves, if you have any. It’s ready!
