Banana cake
Ingredients
- 4 very ripe bananas
- 3 eggs
- 40g of brown sugar
- 40g of coconut blossom sugar
- 110-120g of butter
- 160g of flour
- 1/2 sachet of baking powder
- 55-100g of dark chocolate (chips, 51% cocoa) - base recipe 150g
- (optional) 2 tablespoons of rum

Tasty, but the texture needs fixing
- 4 very ripe bananas
- 3 eggs
- 20g of brown sugar (to whisk the egg whites)
- 40-50g of coconut blossom sugar
- 60g of peanut butter
- 100g of butter
- 160g of flour
- 1/2 sachet of baking powder
- 60g of dark chocolate (chips, 51% cocoa) - base recipe 150g
- (optional) 2 tablespoons of rum
Preparation
- Preheat the oven to 180° C
- Sauté the bananas - cut into rounds - in a little butter, let them cool
- Mix the two sugars with the eggs, until pale
- Add the flour and the baking powder, then the melted butter. Add the rum and the chocolate roughly chopped into chips
- Add the well-cooled bananas (so they don’t melt the chocolate)
- Pour the batter into a (buttered) loaf tin and bake for 40 minutes
