🍌 Banana Cookies
Ingredients
- 190 g all-purpose flour
- 230 g ripe bananas, peeled (about 2 medium bananas)
- 100 g granulated sugar
- 57 g unsalted butter
- 50 g egg (about 1 large egg, without shell)
- 5 g baking soda
- 1.5 g salt
Instructions

- Preheat the oven to 180°C / 350°F.
- Mash the bananas with a fork until smooth.
- Soften the butter and mix it with the sugar.
- Add the egg and mix until combined.
- Stir in the mashed bananas.
- In a separate bowl, combine the flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture. Mix just until combined; avoid overmixing.
- Drop portions of dough onto a baking sheet lined with parchment paper, leaving some space between each cookie.
- Bake for approximately 10–14 minutes at 180°C / 350°F, until the edges are lightly golden.
- Leave the cookies on the baking sheet for a few minutes before transferring them to a wire rack.
These cookies will have a soft, cake-like texture because of the relatively high amount of banana.
